Description

A luxurious cheese terrine made from whipped cream cheese and mascarpone, folded with roasted tomatoes and fresh herbs, then topped with juicy cherry tomato confit. Rich, elegant, and unbelievably easy — serve with baguette slices or crackers.


Ingredients

  • 300 g cream cheese (Philadelphia, tempéré)
  • 200 g mascarpone
  • 2 c. à soupe crème fraîche épaisse
  • 1 c. à soupe jus de citron
  • 1 gousse d’ail râpée
  • ½ c. à café sel
  • ¼ c. à café poivre
  • 100 g tomates séchées ou confites, coupées en petits morceaux
  • 2 c. à soupe persil frais haché
  • 1 c. à soupe basilic frais haché
  • 1 c. à café thym (frais de préférence)
  • 250 g tomates cerises rouges & jaunes
  • 1 c. à soupe huile d’olive
  • 1 c. à café miel
  • 1 c. à café vinaigre balsamique
  • 1 pincée de sel
  • Feuilles de thym

Instructions

  1. Prepare the Tomato Confit: Cut the cherry tomatoes in half. Mix with olive oil, honey, balsamic vinegar, salt, and thyme. Sauté for 6–7 minutes, just to soften slightly. Let cool.
  2. Make the Cheese Terrine Base: Beat cream cheese and mascarpone until smooth and airy. Add crème fraîche, lemon juice, garlic, salt, and pepper. Gently fold in sun-dried tomatoes and fresh herbs.
  3. Mold the Terrine: Line a loaf pan or terrine mold with plastic wrap. Pour the mixture into the mold, pressing down slightly. Smooth the top. Cover and refrigerate for a minimum of 4 hours (ideally overnight).
  4. Unmold & Finish: Carefully unmold onto a serving platter. Top with the cooled confit tomatoes. Add a few fresh thyme leaves. Let sit at room temperature for 10 minutes before serving for enhanced flavor.
