Description

Creamy Shrimp & Spinach Lasagna Roll-Ups are a delightful seafood twist on traditional lasagna, featuring creamy ricotta and fresh spinach wrapped in tender lasagna noodles, topped with a rich creamy sauce and succulent shrimp.


Ingredients

  • 810 lasagna noodles, cooked al dente
  • 1 ½ cups ricotta cheese
  • 1 cup fresh spinach, sautéed & chopped
  • ½ cup shredded mozzarella
  • ¼ cup Parmesan cheese
  • 1 egg
  • 1 garlic clove, minced
  • Salt & pepper to taste
  • 2 tbsp butter (for sauce)
  • 3 garlic cloves, minced (for sauce)
  • 1 cup heavy cream
  • ½ cup chicken or seafood broth
  • ¼ cup grated Parmesan (for sauce)
  • ½ tsp paprika (for sauce)
  • ¼ tsp chili flakes (for sauce)
  • 1 tbsp lemon juice (for sauce)
  • 1 tbsp fresh parsley (for sauce)
  • 1216 large shrimp, peeled & deveined
  • 1 tbsp butter (for shrimp)
  • 1 tbsp olive oil (for shrimp)
  • ½ tsp paprika (for shrimp)
  • ½ tsp chili flakes (for shrimp)
  • Salt & pepper (for shrimp)

Instructions

  1. Prepare the Filling: In a bowl combine ricotta, spinach, mozzarella, Parmesan, egg, garlic, salt, and pepper. Mix until creamy and fully combined.
  2. Assemble the Roll-Ups: Lay cooked lasagna noodles flat. Spread a generous amount of ricotta-spinach filling over each noodle. Roll tightly from end to end. Place seam-side down on a plate.
  3. Make the Creamy Sauce: Melt butter in a skillet over medium heat. Add garlic and sauté for 30 seconds. Pour in heavy cream and broth. Stir in Parmesan, paprika, chili flakes, salt, and pepper. Simmer for 3–4 minutes until slightly thickened. Add lemon juice and parsley. Pour a layer of sauce on the bottom of a baking dish.
  4. Bake the Roll-Ups: Place lasagna roll-ups into the sauce-filled baking dish. Spoon more sauce over the top. Bake at 375°F / 190°C for 15–18 minutes until hot and bubbling.
  5. Cook the Shrimp: Heat butter and olive oil in a skillet. Add shrimp, paprika, chili flakes, salt, and pepper. Cook for 2–3 minutes per side until pink and slightly caramelized. Spoon some of the pan juices over them.
  6. Serve: Plate lasagna roll-ups. Spoon extra creamy sauce over them. Top with golden shrimp. Sprinkle parsley and chili flakes for a vibrant finish.

Notes

  • For a spicier kick, increase the amount of chili flakes.
  • Feel free to substitute shrimp with chicken or a mix of seafood.
  • Can be prepared ahead of time and baked just before serving.
