Description

A delicious and creamy chicken orzo pasta dish that’s loaded with spinach and garlic!


Ingredients

Scale
  • 1 lb chicken breast, cubed
  • 1 cup orzo pasta
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 1 lemon, juiced and zested
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Season 1 lb cubed chicken with salt and pepper.
  2. Heat 2 tablespoons olive oil in a large skillet over medium heat and cook chicken for 5 to 6 minutes then remove.
  3. Add garlic and sauté for 30 seconds until fragrant.
  4. Stir in 1 cup orzo and toast for 1 minute.
  5. Pour in 3 cups chicken broth and simmer for 10 minutes stirring until orzo is tender.
  6. Lower heat and stir in 1 cup heavy cream, lemon juice, and zest.
  7. Add chicken back to the skillet with spinach and cook until wilted.
  8. Finish with parmesan and adjust seasoning before serving.

Notes

  • For extra flavor, consider adding herbs such as thyme or basil.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
