A delicious and creamy chicken orzo pasta dish that’s loaded with spinach and garlic!
Ingredients

- 1 lb chicken breast, cubed
- 1 cup orzo pasta
- 3 cups chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 1/2 cup grated parmesan cheese
- 2 tablespoons olive oil
- 1 lemon, juiced and zested
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Season 1 lb cubed chicken with salt and pepper.
- Heat 2 tablespoons olive oil in a large skillet over medium heat and cook chicken for 5 to 6 minutes then remove.
- Add garlic and sauté for 30 seconds until fragrant.
- Stir in 1 cup orzo and toast for 1 minute.
- Pour in 3 cups chicken broth and simmer for 10 minutes stirring until orzo is tender.
- Lower heat and stir in 1 cup heavy cream, lemon juice, and zest.
- Add chicken back to the skillet with spinach and cook until wilted.
- Finish with parmesan and adjust seasoning before serving.
Notes
- For extra flavor, consider adding herbs such as thyme or basil.
- Leftovers can be stored in an airtight container in the fridge for up to 3 days.
