- 2 cups water

- 1 large avocado (ripened)
- 2 garlic cloves
- 1 cup baby spinach
- 1 green chili (optional)
- Crushed black pepper (to taste)
- 1 teaspoon olive oil (optional)
- 1 tablespoon lemon juice
- 1/4 cup water (or as needed)
- Red chili flakes (to taste)
Instructions
- Boil and salt the water, then add the penne pasta and cook until al dente.
- Drain the pasta, reserving 1/4 cup of cooking water.
- In a food processor, blend the avocado, garlic, spinach, lemon juice, olive oil, and season with salt and pepper.
- Add the reserved pasta water to the processor, blending until smooth and creamy.
- Toss the cooked pasta with the avocado sauce until evenly coated.
- Serve warm, adding red chili flakes for an extra kick if desired.
