Description

A moist, spiced carrot cake baked in a bundt pan with a luscious cream cheese swirl inside, finished with cream cheese glaze and crunchy pecans.


Ingredients

  • 8 oz cream cheese, softened (for swirl)
  • ¼ cup granulated sugar (for swirl)
  • 1 egg (for swirl)
  • 1 tsp vanilla extract (for swirl)
  • 4 oz cream cheese, softened (for glaze)
  • 1 cup powdered sugar (for glaze)
  • 23 tbsp milk (to thin glaze)
  • 1 tsp vanilla extract (for glaze)
  • ½ cup chopped pecans (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a bundt pan.
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. In another large bowl, whisk oil, granulated sugar, and brown sugar until smooth. Beat in eggs and vanilla.
  4. Stir in grated carrots, pineapple, and nuts (if using).
  5. Gradually fold in dry ingredients until combined.
  6. Beat cream cheese, sugar, egg, and vanilla until smooth and creamy for the swirl.
  7. Pour half the carrot cake batter into the bundt pan.
  8. Spoon cream cheese mixture evenly over the batter (avoid touching the edges).
  9. Top with remaining carrot cake batter.
  10. Bake 55–65 minutes, until a toothpick comes out clean. Cool completely.
  11. Beat cream cheese, powdered sugar, milk, and vanilla until smooth and pourable for the glaze.
  12. Drizzle glaze over cooled cake.
  13. Sprinkle with chopped pecans.
