Description
A moist, spiced carrot cake baked in a bundt pan with a luscious cream cheese swirl inside, finished with cream cheese glaze and crunchy pecans.

- ¼ cup granulated sugar (for swirl)
- 1 egg (for swirl)
- 1 tsp vanilla extract (for swirl)
- 4 oz cream cheese, softened (for glaze)
- 1 cup powdered sugar (for glaze)
- 2–3 tbsp milk (to thin glaze)
- 1 tsp vanilla extract (for glaze)
- ½ cup chopped pecans (for topping)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a bundt pan.
- In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
- In another large bowl, whisk oil, granulated sugar, and brown sugar until smooth. Beat in eggs and vanilla.
- Stir in grated carrots, pineapple, and nuts (if using).
- Gradually fold in dry ingredients until combined.
- Beat cream cheese, sugar, egg, and vanilla until smooth and creamy for the swirl.
- Pour half the carrot cake batter into the bundt pan.
- Spoon cream cheese mixture evenly over the batter (avoid touching the edges).
- Top with remaining carrot cake batter.
- Bake 55–65 minutes, until a toothpick comes out clean. Cool completely.
- Beat cream cheese, powdered sugar, milk, and vanilla until smooth and pourable for the glaze.
- Drizzle glaze over cooled cake.
- Sprinkle with chopped pecans.

- For a richer flavor, let the cake sit overnight before serving.
