Description

A delicious and easy-to-make rotisserie chicken salad that combines shredded chicken with creamy dressing, walnuts, and cranberries.


Ingredients

Scale
  • 16 oz rotisserie chicken (1 whole chicken, picked)
  • 1 cup mayonnaise (or use plain Greek Yogurt)
  • 1/3 cup Dijon mustard
  • 1/2 cup chopped walnuts
  • 8 oz dried cranberries
  • 2 ribs celery (finely chopped)
  • to taste salt and pepper

Instructions

  1. Pick and shred rotisserie chicken.
  2. Stir in Greek yogurt, Dijon mustard, cranberries, celery, walnuts, and salt & pepper.
  3. Store in an airtight container in the fridge for up to 5 days.
