- 4 cups low-sodium vegetable broth
- 1 cup diced carrots
- 1 cup diced celery
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 1 bay leaf

- Fresh parsley for garnish
Instructions
- In a large pot over medium heat, sauté the onions, carrots, and celery in a splash of oil for about 5 minutes until softened.
- Add the minced garlic and cook for an additional minute until fragrant.
- Pour in the vegetable broth and bring to a gentle simmer.
- Stir in the shredded turkey, dried thyme, and bay leaf. Let it simmer for about 20 minutes to meld flavors.
- Season with salt and pepper to taste before serving.
