- ½ cup (115 g) unsalted butter
- 1 tbsp sugar
- ¼ tsp salt
- 1 cup (125 g) all-purpose flour
- 4 large eggs
- 2 cups (480 ml) heavy cream, chilled
- ½ cup (60 g) powdered sugar
- 1 tsp vanilla extract
- ½ tsp cotton candy flavor extract (optional)
- 2 cups (240 g) powdered sugar (for glaze)
- 3–4 tbsp milk (adjust for consistency)
- ½ tsp vanilla extract (for glaze)
- Food coloring gels (pink, blue, purple)
- Cotton candy sprinkles, pastel jimmies, or edible glitter (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a saucepan, combine water, butter, sugar, and salt. Bring to a boil.
- Add flour all at once and stir vigorously until the mixture forms a ball and pulls away from the sides of the pan.
- Remove from heat and let cool slightly (5 minutes).
- Beat in eggs one at a time until dough is smooth and glossy.
- Pipe or spoon mounds onto the baking sheet.
- Bake 20–25 minutes, until puffed and golden. Cool completely before filling.
- Beat heavy cream until soft peaks form.
- Add powdered sugar, vanilla, and cotton candy extract. Beat until stiff peaks form. Keep chilled.
- Whisk powdered sugar, milk, and vanilla until smooth and pourable.
- Divide into small bowls and tint with pink, blue, and purple food coloring. Swirl colors lightly together for a cotton candy effect.
- Slice cooled cream puffs in half.
- Pipe cotton candy whipped cream generously inside.
- Dip tops into glaze and set aside to dry slightly.
- Sprinkle with cotton candy sprinkles or edible glitter.
