Ingredients

  • 1 cup (240 ml) water
  • ½ cup (115 g) unsalted butter
  • 1 tbsp sugar
  • ¼ tsp salt
  • 1 cup (125 g) all-purpose flour
  • 4 large eggs
  • 2 cups (480 ml) heavy cream, chilled
  • ½ cup (60 g) powdered sugar
  • 1 tsp vanilla extract
  • ½ tsp cotton candy flavor extract (optional)
  • 2 cups (240 g) powdered sugar (for glaze)
  • 34 tbsp milk (adjust for consistency)
  • ½ tsp vanilla extract (for glaze)
  • Food coloring gels (pink, blue, purple)
  • Cotton candy sprinkles, pastel jimmies, or edible glitter (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a saucepan, combine water, butter, sugar, and salt. Bring to a boil.
  3. Add flour all at once and stir vigorously until the mixture forms a ball and pulls away from the sides of the pan.
  4. Remove from heat and let cool slightly (5 minutes).
  5. Beat in eggs one at a time until dough is smooth and glossy.
  6. Pipe or spoon mounds onto the baking sheet.
  7. Bake 20–25 minutes, until puffed and golden. Cool completely before filling.
  8. Beat heavy cream until soft peaks form.
  9. Add powdered sugar, vanilla, and cotton candy extract. Beat until stiff peaks form. Keep chilled.
  10. Whisk powdered sugar, milk, and vanilla until smooth and pourable.
  11. Divide into small bowls and tint with pink, blue, and purple food coloring. Swirl colors lightly together for a cotton candy effect.
  12. Slice cooled cream puffs in half.
  13. Pipe cotton candy whipped cream generously inside.
  14. Dip tops into glaze and set aside to dry slightly.
  15. Sprinkle with cotton candy sprinkles or edible glitter.
