Coconut Snow Drift Donuts are delightful, fluffy yeast donuts coated in a sweet coconut glaze, perfect for any occasion.

- 3 cups (360g) all-purpose flour
- 1 packet (2 ¼ tsp) active dry yeast
- ¼ cup (50g) granulated sugar
- ½ tsp salt
- ¾ cup (180ml) warm milk
- 3 tbsp (45g) unsalted butter, melted
- 1 large egg
- Vegetable oil (for frying)
- 1 ½ cups (180g) powdered sugar
- 2–3 tbsp milk (add slowly)
- 1 tsp vanilla extract
- 1–2 cups sweetened shredded coconut (for coating)
Instructions
- Make the Donut Dough: Warm the milk (not hot). Add the yeast and let sit 5 minutes to activate. In a bowl, mix flour, sugar, and salt. Add yeast mixture, melted butter, and egg. Knead 5–8 minutes until smooth and elastic (or use stand mixer). Cover and let rise 1 hour or until doubled.
- Shape & Fry: Dust your surface with flour. Roll dough to ½ inch thick. Cut donuts using a donut cutter (or large cup + small cap for hole). Let rest 10 minutes while oil heats. Heat oil to 350°F (175°C). Fry 1–2 minutes per side until golden. Place on wire rack to drain.
- Dip & Coat: Stir together powdered sugar + vanilla + milk until smooth and thick. Dip the top of each warm donut into glaze. Immediately press into shredded coconut to create the snowy layer. Let set 10–15 minutes.
Notes
- Ensure the milk is warm, not hot, to activate the yeast properly.
- Adjust the amount of milk in the glaze for desired consistency.
- For a richer flavor, consider using coconut milk instead of regular milk.
