Description
Classic Waldorf Salad Cups are a refreshing and light appetizer made with a mix of fruits, nuts, and a creamy dressing, served in crisp lettuce leaves.
Ingredients

- 2 cups red grapes (halved, seedless)
- 2 crisp apples (diced, Granny Smith or Honeycrisp)
- 1 cup celery (diced)
- 1 cup pineapple chunks (optional, for extra sweetness)
- ½ cup walnuts (toasted and roughly chopped)
- ¼ cup dried cranberries (optional)
- ½ cup mayonnaise (or half mayo, half Greek yogurt for lighter version)
- 1 tbsp lemon juice
- 1 tbsp honey
- Salt & black pepper to taste
- 8–10 Romaine or butter lettuce leaves (whole, washed & dried)
Instructions
- In a bowl, whisk together mayonnaise, lemon juice, honey, salt, and pepper. Adjust sweetness and tang to taste.
- In a large bowl, combine grapes, apples, celery, pineapple, walnuts, and cranberries.
- Toss gently with dressing until evenly coated.
- Lay lettuce leaves on a serving platter.
- Spoon Waldorf salad mixture into each lettuce leaf to form “cups.”
- Garnish with extra walnuts or fresh herbs if desired.
- Serve immediately as a light appetizer, snack, or side dish.
Notes
- For a lighter version, use half mayonnaise and half Greek yogurt.
- Feel free to customize the fruits and nuts based on your preference.
- This salad can be made ahead of time, but assemble just before serving to keep the lettuce crisp.
