Description

A delightful dessert featuring layers of puff pastry filled with creamy vanilla custard and topped with a rich chocolate glaze.


Ingredients

  • 2 sheets of puff pastry (store-bought or homemade)
  • 1 egg, lightly beaten (for brushing)
  • 3 cups (750 ml) whole milk
  • ½ cup (100 g) granulated sugar
  • ¼ cup (30 g) cornstarch
  • 4 egg yolks
  • 2 tbsp unsalted butter
  • 1½ tsp vanilla extract
  • Pinch of salt
  • ½ cup (120 ml) heavy cream
  • 3½ oz (100 g) dark chocolate, chopped
  • 1 tsp unsalted butter (for shine)

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Line two baking sheets with parchment paper.
  3. Place puff pastry sheets on the trays, prick all over with a fork, and cover with another sheet of parchment and a baking tray (to prevent puffing).
  4. Bake for 15–20 minutes until golden and crisp. Let cool completely.
  5. In a saucepan, heat the milk until just simmering.
  6. In a bowl, whisk together sugar, cornstarch, egg yolks, and salt.
  7. Gradually pour the hot milk into the yolk mixture while whisking.
  8. Return to the saucepan and cook over medium heat, stirring constantly, until thickened and smooth (about 3–5 minutes).
  9. Remove from heat; stir in butter and vanilla.
  10. Cover with plastic wrap (touching the surface) and chill until cold.
  11. Place one pastry sheet on a flat surface.
  12. Spread chilled custard evenly over it.
  13. Top with the second pastry sheet and press gently.
  14. Refrigerate for at least 2 hours to set.
  15. Heat cream until steaming, pour over chopped chocolate, and let stand 2 minutes.
  16. Stir until smooth, then add butter for shine.
  17. Pour glaze over the top pastry and spread evenly.
  18. Chill until set, then cut into neat squares with a hot knife.
