Description
A no-bake layered dessert inspired by éclairs: graham crackers layered with vanilla pastry cream and chocolate ganache. Soft, creamy, and indulgent!

- 2 packages (3.4 oz each) instant vanilla pudding mix
- 3 cups cold whole milk
- 1 tub (8 oz) whipped topping (Cool Whip) or 2 cups homemade whipped cream
- 1 box graham crackers (about 14–16 full sheets)
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
- 2 tbsp unsalted butter
- Powdered sugar (optional)
Instructions
- In a large bowl, whisk pudding mix and cold milk until smooth and thickened.
- Fold in whipped topping until creamy and fluffy.
- In a 9×13-inch dish, place a layer of graham crackers to cover the bottom.
- Spread half of the pudding mixture over the crackers.
- Add another layer of graham crackers.
- Spread the remaining pudding mixture.
- Finish with a final layer of graham crackers on top.
- Heat cream until just simmering, then pour over chocolate chips.
- Let sit 2 minutes, then stir until smooth.
- Add butter and stir until glossy.
- Pour chocolate ganache over the top cracker layer.
- Smooth evenly.
- Cover and refrigerate at least 6 hours (overnight is best) so crackers soften into a cake-like texture.
- Slice into squares.
- Dust with powdered sugar before serving, if desired.
Notes
- For best results, refrigerate overnight to allow flavors to meld.
- Feel free to customize with different toppings or flavors of pudding.
