Description

A festive chocolate yule log filled with whipped cream and coated in glossy chocolate ganache, perfect for holiday celebrations.


Ingredients

  • 4 large eggs
  • ½ cup (100g) granulated sugar
  • ¼ cup (30g) cocoa powder
  • ½ cup (60g) all-purpose flour
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • Powdered sugar (for dusting towel)
  • 1 ½ cups (360ml) heavy whipping cream
  • ¼ cup (30g) powdered sugar
  • 1 tsp vanilla extract
  • Optional: 2 tbsp mascarpone (for stability)
  • 1 cup (240ml) heavy cream
  • 8 oz (225g) semi-sweet chocolate, finely chopped
  • 2 tbsp butter (for shine)
  • Fresh cranberries
  • Fresh rosemary sprigs
  • Whipped cream rosettes
  • Powdered sugar “snow”

Instructions

  1. Preheat oven to 350°F / 175°C and line a 10×15 inch jelly roll pan with parchment paper.
  2. Beat eggs and sugar for 5 minutes until very pale, thick, and tripled in volume.
  3. Sift flour, cocoa, and salt together, then gently fold into the egg mixture in 2–3 additions.
  4. Add vanilla and fold until smooth, then spread into the pan evenly.
  5. Bake for 10–12 minutes until springy, being careful not to overbake.
  6. Dust a clean kitchen towel with powdered sugar, flip the hot cake onto the towel, and peel off parchment.
  7. Roll the cake (with the towel inside) from the short side and let cool fully.
  8. Beat chilled cream, powdered sugar, vanilla, and mascarpone (if using) until stiff peaks form, then keep refrigerated.
  9. Unroll the cooled cake gently, spread whipped cream evenly over it, and re-roll tightly without the towel.
  10. Trim the ends neatly.
  11. Heat heavy cream until steaming, pour over chopped chocolate, let sit for 2 minutes, then stir until smooth and add butter for shine.
  12. Let ganache thicken for 10–15 minutes until spreadable.
  13. Place the roll on a wire rack or serving tray, pour or spread ganache over the log, and smooth or swirl it.
  14. Chill for 10–15 minutes to set.
  15. Pipe whipped cream swirls on top, add fresh cranberries and rosemary sprigs, and dust lightly with powdered sugar “snow.”
