- For the Crust:
- 2 cups (200 g) crushed graham crackers or cinnamon cookies
- ½ cup (115 g) melted butter
- 2 tbsp sugar
- 1 tsp cinnamon
- For the Cheesecake Filling:
- 16 oz (450 g) cream cheese, softened
- ¾ cup (150 g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup (120 ml) sour cream
- ¼ cup (60 ml) heavy cream
- For the Churro Topping:
- 1 cup (125 g) all-purpose flour
- 1 cup (240 ml) water
- 1 tbsp sugar
- ½ tsp salt
- 3 tbsp butter
- 1 tsp vanilla extract
- 2 large eggs
- ½ cup (100 g) granulated sugar + 2 tsp cinnamon (for dusting)
Instructions
- Preheat oven to 350°F (175°C).
- Mix graham cracker crumbs, sugar, melted butter, and cinnamon until combined.
- Press firmly into the bottom of a 9-inch springform pan.
- Bake for 8 minutes, then set aside to cool slightly.
- In a large bowl, beat cream cheese until smooth.
- Add sugar and beat until creamy.
- Mix in eggs one at a time, then vanilla, sour cream, and heavy cream.
- Pour the batter over the baked crust and smooth the top.
- In a saucepan, combine water, butter, sugar, and salt. Bring to a simmer.
- Add flour all at once, stirring until the mixture forms a dough ball and pulls away from the pan.
- Transfer to a mixing bowl and let cool for 5 minutes.
- Beat in eggs one at a time, then stir in vanilla.
- Spoon or pipe the churro batter on top of the cheesecake in a spiral pattern.
- Bake for 45–50 minutes, until the top is golden brown and slightly firm.
- Let cool completely, then refrigerate for at least 4 hours or overnight.
- Once chilled, brush the top lightly with melted butter.
- Sprinkle generously with cinnamon sugar.
- Slice and serve chilled or at room temperature.
