  • For the Crust:
  • 2 cups (200 g) crushed graham crackers or cinnamon cookies
  • ½ cup (115 g) melted butter
  • 2 tbsp sugar
  • 1 tsp cinnamon
  • For the Cheesecake Filling:
  • 16 oz (450 g) cream cheese, softened
  • ¾ cup (150 g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup (120 ml) sour cream
  • ¼ cup (60 ml) heavy cream
  • For the Churro Topping:
  • 1 cup (125 g) all-purpose flour
  • 1 cup (240 ml) water
  • 1 tbsp sugar
  • ½ tsp salt
  • 3 tbsp butter
  • 1 tsp vanilla extract
  • 2 large eggs
  • ½ cup (100 g) granulated sugar + 2 tsp cinnamon (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, sugar, melted butter, and cinnamon until combined.
  3. Press firmly into the bottom of a 9-inch springform pan.
  4. Bake for 8 minutes, then set aside to cool slightly.
  5. In a large bowl, beat cream cheese until smooth.
  6. Add sugar and beat until creamy.
  7. Mix in eggs one at a time, then vanilla, sour cream, and heavy cream.
  8. Pour the batter over the baked crust and smooth the top.
  9. In a saucepan, combine water, butter, sugar, and salt. Bring to a simmer.
  10. Add flour all at once, stirring until the mixture forms a dough ball and pulls away from the pan.
  11. Transfer to a mixing bowl and let cool for 5 minutes.
  12. Beat in eggs one at a time, then stir in vanilla.
  13. Spoon or pipe the churro batter on top of the cheesecake in a spiral pattern.
  14. Bake for 45–50 minutes, until the top is golden brown and slightly firm.
  15. Let cool completely, then refrigerate for at least 4 hours or overnight.
  16. Once chilled, brush the top lightly with melted butter.
  17. Sprinkle generously with cinnamon sugar.
  18. Slice and serve chilled or at room temperature.
