A delicious and creamy chicken chili that’s easy to prepare and perfect for chilly nights.

Ingredients

Scale
  • 2 cups cooked shredded chicken
  • 1 can (15 oz) white beans, drained and rinsed
  • 2 cups chicken broth
  • 1 block (8 oz) cream cheese, softened and cubed
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup corn (frozen or canned, drained)
  • 1 can (4 oz) green chilies or 1 jalapeño, chopped
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • Sour cream, for topping
  • Sliced jalapeños, for garnish
  • Tortilla chips, for serving

Instructions

  1. Heat oil in a large pot over medium heat and sauté chopped onion until softened, about 5 minutes. Add garlic and cook for 30 seconds.
  2. Stir in diced tomatoes with green chiles, white beans, corn, green chilies or jalapeños, chili powder, cumin, oregano, salt, and pepper. Mix well.
