- 1 1/2 cups (360 ml) heavy whipping cream, cold

Instructions
- Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
- In a bowl, beat eggs and sugar together until pale and fluffy (about 3–4 minutes).
- Sift in flour, cocoa powder, baking powder, and salt. Gently fold until just combined. Add vanilla.
- Spread batter evenly in prepared pan.
- Bake for 10–12 minutes, or until springy to the touch.
- While still warm, invert cake onto a clean kitchen towel dusted with powdered sugar.
- Peel off parchment and roll cake up with the towel (starting from the short side). Let cool completely in the rolled shape.
- Whip heavy cream, powdered sugar, cocoa powder, and vanilla until stiff peaks form. Chill until ready to use.
- Unroll cooled cake gently. Spread an even layer of chocolate whipped cream.
- Arrange halved strawberries evenly across the cream.
- Re-roll the cake tightly, using parchment to guide it.
- Trim edges for a clean look.
- Pipe extra chocolate cream on top, garnish with strawberries and mint.
- Dust lightly with cocoa or powdered sugar before serving.
