  • 1 cup boiling water
  • For the Cookie Dough Filling (egg-free):
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • ¼ cup milk
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour (heat-treated*)
  • ½ tsp salt
  • 1 ½ cups mini chocolate chips
  • (Optional) ½ cup crushed blue sprinkles/cookies for color
  • For the Blue Frosting:
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 23 tbsp heavy cream (or milk)
  • 1 tsp vanilla extract
  • Blue food coloring (gel preferred)
  • Garnish:
  • Extra chocolate chips

Instructions

  1. Bake the Cake: Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans. In a large bowl, whisk flour, sugar, cocoa, baking powder, baking soda, and salt. Add milk, oil, eggs, and vanilla. Mix until smooth. Stir in boiling water (batter will be thin). Divide between pans and bake 25–30 minutes until a toothpick comes out clean. Cool completely.
  2. Make Cookie Dough Filling: In a bowl, cream butter with brown and granulated sugar until fluffy. Add milk and vanilla. Mix in flour and salt until combined. Fold in chocolate chips (and sprinkles if using). Chill 20 minutes to firm slightly.
  3. Make Frosting: Beat butter until creamy. Add powdered sugar gradually, alternating with cream, until fluffy. Mix in vanilla and blue coloring until vibrant and smooth.
  4. Assemble the Cake: Place one chocolate cake layer on a plate. Spread cookie dough filling evenly on top. Place the second cake layer on top and press gently. Frost the top and sides with blue frosting. Sprinkle extra chocolate chips on top for garnish.
  5. Chill & Serve: Chill the cake for 30–60 minutes to help layers set. Slice thick and serve chilled or at room temperature.
