Description
A delicious and quick chicken dish featuring tender chicken breasts sautéed with fresh peas, mint, and garlic.
Ingredients

- 4 pieces boneless and skinless chicken breasts
- 1 cup fresh or frozen peas (thawed)
- 1/4 cup fresh mint (chopped)
- 2 cloves garlic (minced)
- 1 tablespoon lemon juice (freshly squeezed)
- 3 tablespoons extra-virgin olive oil

- to taste freshly cracked black pepper
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken breasts and cook for 6–7 minutes per side, until golden brown and fully cooked (internal temperature of 165°F or 74°C).
- Remove chicken from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
- Add peas to the skillet and cook for 2–3 minutes until heated through.
- Stir in fresh mint and lemon juice.
- Return chicken to the skillet and toss to combine with peas and mint.
- Season with additional salt and pepper if needed.
- Serve warm.
Notes
- This dish can be served with rice or a side salad for a complete meal.
- Feel free to adjust the amount of mint based on your preference.
