Description
A delicious fusion of Mexican and Italian flavors, these Cheesy Taco Lasagna Rolls are filled with seasoned meat and creamy cheese, then baked to perfection.

- 1 pound ground beef (or ground turkey)
- 1 packet taco seasoning (or 2 tablespoons homemade mix)
- ½ cup onion, finely diced
- 1 cup canned black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup salsa or taco sauce
- 2 cups ricotta cheese (or cottage cheese)
- 1 large egg
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- ½ teaspoon garlic powder
- ½ teaspoon chili powder
- Salt and pepper, to taste
- 12 lasagna noodles, cooked al dente and drained
- 2 cups enchilada sauce (or tomato sauce with taco spices)
- 1 cup extra shredded mozzarella
- ½ cup shredded cheddar
- Fresh cilantro or parsley, chopped (for garnish)
Instructions
- In a skillet, cook ground beef and onion over medium heat until browned. Drain excess fat. Stir in taco seasoning, black beans, corn, and salsa. Simmer for 5 minutes until well combined.
- In a bowl, combine ricotta, egg, cheddar, mozzarella, garlic powder, chili powder, salt, and pepper. Mix until smooth.
- Preheat oven to 375°F (190°C). Lay out cooked lasagna noodles on a flat surface. Spread a layer of cheese mixture over each noodle. Add a spoonful of taco meat filling on top. Roll up each noodle carefully and place seam-side down in a greased baking dish.
- Pour enchilada sauce evenly over the rolls. Sprinkle with mozzarella and cheddar cheese.
- Cover with foil and bake for 20 minutes. Remove foil and bake another 10–15 minutes, until cheese is bubbly and golden.
- Garnish with fresh cilantro or parsley. Serve warm with sour cream, guacamole, or extra salsa on the side.
Notes
- Feel free to substitute ground turkey for a leaner option.
- For a vegetarian version, omit the meat and add more beans or vegetables.
- These rolls can be made ahead of time and stored in the refrigerator before baking.
