Description

A delicious fusion of Mexican and Italian flavors, these Cheesy Taco Lasagna Rolls are filled with seasoned meat and creamy cheese, then baked to perfection.


Ingredients

  • 1 pound ground beef (or ground turkey)
  • 1 packet taco seasoning (or 2 tablespoons homemade mix)
  • ½ cup onion, finely diced
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup salsa or taco sauce
  • 2 cups ricotta cheese (or cottage cheese)
  • 1 large egg
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon chili powder
  • Salt and pepper, to taste
  • 12 lasagna noodles, cooked al dente and drained
  • 2 cups enchilada sauce (or tomato sauce with taco spices)
  • 1 cup extra shredded mozzarella
  • ½ cup shredded cheddar
  • Fresh cilantro or parsley, chopped (for garnish)

Instructions

  1. In a skillet, cook ground beef and onion over medium heat until browned. Drain excess fat. Stir in taco seasoning, black beans, corn, and salsa. Simmer for 5 minutes until well combined.
  2. In a bowl, combine ricotta, egg, cheddar, mozzarella, garlic powder, chili powder, salt, and pepper. Mix until smooth.
  3. Preheat oven to 375°F (190°C). Lay out cooked lasagna noodles on a flat surface. Spread a layer of cheese mixture over each noodle. Add a spoonful of taco meat filling on top. Roll up each noodle carefully and place seam-side down in a greased baking dish.
  4. Pour enchilada sauce evenly over the rolls. Sprinkle with mozzarella and cheddar cheese.
  5. Cover with foil and bake for 20 minutes. Remove foil and bake another 10–15 minutes, until cheese is bubbly and golden.
  6. Garnish with fresh cilantro or parsley. Serve warm with sour cream, guacamole, or extra salsa on the side.

  • Feel free to substitute ground turkey for a leaner option.
  • For a vegetarian version, omit the meat and add more beans or vegetables.
