A delicious and easy recipe for Cheesy Chicken Katsu Curry that combines crispy chicken katsu with a rich Japanese curry sauce.

- 2 chicken breasts (butterflied & pounded evenly)
- Salt & black pepper, to taste
- 4 mozzarella cheese slices (or cheese sticks)
- ½ cup all-purpose flour
- 2 large eggs (beaten)
- 1 cup panko breadcrumbs
- Oil for frying
- 1 tbsp butter
- 1 small onion (finely chopped)
- 1 carrot (diced)
- 2 cloves garlic (minced)
- 2 cups chicken stock
- 2 tbsp Japanese curry roux blocks (or store-bought curry cubes)
- 1 tbsp soy sauce
- 1 tsp honey or sugar (optional, for balance)
- Fresh parsley or green onions, chopped (for garnish)
Instructions
- Prepare the Curry Sauce: In a saucepan, melt butter and sauté onion, carrot, and garlic until soft. Pour in chicken stock and simmer for 10 minutes. Stir in curry roux cubes, soy sauce, and honey. Cook until thickened. Keep warm.
- Prepare the Cheesy Chicken Katsu: Season chicken breasts with salt and pepper. Place mozzarella slices in the center of each breast, then fold over (or roll) and secure with toothpicks if needed. Dredge chicken in flour, dip into beaten eggs, then coat with panko breadcrumbs. Heat oil (170–175°C / 340–350°F) and deep-fry until golden brown and cooked through (6–8 minutes). Drain on paper towels and rest before slicing.
- Assemble the Dish: Pour a generous layer of curry sauce onto a plate. Slice the cheesy chicken katsu and place on top of the curry. Garnish with parsley or green onions.

- Ensure the oil is at the right temperature for frying to achieve a crispy texture.
- Feel free to adjust the amount of curry roux to your taste preference.
- For a healthier option, you can bake the chicken instead of frying.
