Description

A comforting and delicious Cheesy Beef & Potato Skillet Bake that combines savory ground beef, tender potatoes, and melted cheese for a satisfying meal.


Ingredients

  • 1 lb (450 g) ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 tsp Italian seasoning
  • ½ tsp black pepper
  • Salt to taste
  • 2 tbsp tomato paste
  • ½ cup beef broth or water
  • 1.5 lb (700 g) baby potatoes (whole or halved)
  • 2 tbsp olive oil
  • ½ tsp garlic powder
  • Salt & pepper
  • 1 cup shredded mozzarella
  • 1 cup shredded cheddar
  • Fresh parsley for topping

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with olive oil, garlic powder, salt, and pepper. Spread in a cast-iron skillet or baking dish.
  3. Roast for 20 minutes, until lightly golden and fork-tender.
  4. In a large pan, cook ground beef over medium-high heat until browned. Add onion and garlic and cook for 2–3 minutes.
  5. Stir in paprika, chili powder, Italian seasoning, salt, and pepper. Add tomato paste and cook for 1 minute.
  6. Pour in broth, reduce heat, and let it simmer for 5 minutes until thickened.
  7. Remove potatoes from the oven and spoon the savory beef mixture evenly over the potatoes.
  8. Top with mozzarella and cheddar. Return to oven and bake for 10–12 minutes, or until cheese is melted and bubbly.
  9. Broil for 1–2 minutes for a golden top (optional but delicious).
  10. Sprinkle with fresh parsley and serve hot.
