- 1 lb (450 g) ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp chili powder
- 1 tsp Italian seasoning
- ½ tsp black pepper
- Salt to taste
- 2 tbsp tomato paste
- ½ cup beef broth or water
- 1.5 lb (700 g) baby potatoes (whole or halved)
- 2 tbsp olive oil
- ½ tsp garlic powder
- Salt & pepper
- 1 cup shredded mozzarella
- 1 cup shredded cheddar
- Fresh parsley for topping
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with olive oil, garlic powder, salt, and pepper. Spread in a cast-iron skillet or baking dish.
- Roast for 20 minutes, until lightly golden and fork-tender.
- In a large pan, cook ground beef over medium-high heat until browned. Add onion and garlic and cook for 2–3 minutes.
- Stir in paprika, chili powder, Italian seasoning, salt, and pepper. Add tomato paste and cook for 1 minute.
- Pour in broth, reduce heat, and let it simmer for 5 minutes until thickened.
- Remove potatoes from the oven and spoon the savory beef mixture evenly over the potatoes.
- Top with mozzarella and cheddar. Return to oven and bake for 10–12 minutes, or until cheese is melted and bubbly.
- Broil for 1–2 minutes for a golden top (optional but delicious).
- Sprinkle with fresh parsley and serve hot.

- Feel free to adjust the spices according to your taste.
- For a spicier version, add more chili powder or some diced jalapeños.
