Description

Juicy, perfectly seasoned ground beef wrapped in a toasted tortilla with layers of cheddar and molten queso. Soft inside, crispy outside, and ridiculously delicious.


Ingredients

  • 1 lb (450 g) ground beef
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade: chili powder, paprika, cumin, oregano, salt)
  • ¼ cup water
  • Salt & pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack (optional but amazing)
  • ¾1 cup warm queso (store-bought or homemade)
  • 1 cup evaporated milk (for homemade queso)
  • 1 tbsp butter (for homemade queso)
  • 1 tbsp cornstarch (for homemade queso)
  • 1 ½ cups shredded white American cheese or mozzarella (for homemade queso)
  • Pinch of salt (for homemade queso)
  • 46 large flour tortillas
  • Butter or oil for toasting

Instructions

  1. In a skillet, cook ground beef until browned. Add onion and garlic; cook until softened. Drain excess grease. Add taco seasoning + water. Simmer 2–3 minutes until saucy, not dry.
  2. Heat evaporated milk + butter in a pot. Whisk cornstarch with a splash of cold milk; add to pot. Simmer 1 minute. Add cheese gradually and whisk until smooth. Keep warm — queso thickens as it cools.
  3. For each tortilla: Sprinkle a layer of shredded cheddar/Jack. Add a generous scoop of beef filling. Drizzle with warm queso (as much as your heart desires). Add another small handful of cheese. Fold tightly into a burrito (sides in, then roll).
  4. Heat a skillet with a little butter or oil. Place burritos seam-side down. Cook until the outside is golden, slightly crispy, and cheese melted inside. Flip and toast the other side.
  5. Serve with extra warm queso drizzled over the top, sour cream, salsa or pico, and hot sauce.

Notes

  • For a spicier kick, add jalapeños to the beef filling.
  • Feel free to customize the cheese layers with your favorites.
  • These burritos can be frozen for later use; just reheat in the oven.
