Description
A delicious and hearty Cheesy Beef Enchilada Casserole that combines layers of seasoned beef, tortillas, and melted cheese for a flavorful meal.

- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade blend)
- 1 can (10 oz) red enchilada sauce
- 1 can (10 oz) green enchilada sauce (or use 2 red)
- 1 can (15 oz) black beans, drained & rinsed
- 1 cup frozen corn (optional)
- 10 small flour or corn tortillas, cut into halves or quarters
- 3 cups shredded Mexican blend cheese (or cheddar & Monterey Jack)
- Fresh cilantro or green onions (for garnish)
Instructions
- In a large skillet, cook ground beef and onion over medium heat until browned.
- Drain excess grease, then stir in garlic and taco seasoning.
- Add black beans, corn, and ½ cup enchilada sauce. Mix and remove from heat.
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Spread ½ cup enchilada sauce on the bottom.
- Layer tortillas, beef mixture, cheese, and enchilada sauce.
- Repeat layers until ingredients are used up, finishing with cheese on top.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake another 10–15 minutes, until cheese is melted and bubbly.
- Let rest for 10 minutes before slicing.
- Garnish with fresh cilantro, green onions, or sour cream.
Notes
- Feel free to customize with your favorite toppings.
- Can be made ahead and stored in the refrigerator before baking.
- For a spicier version, add jalapeños or hot sauce.
