Description

A delicious and hearty Cheesy Beef Enchilada Casserole that combines layers of seasoned beef, tortillas, and melted cheese for a flavorful meal.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade blend)
  • 1 can (10 oz) red enchilada sauce
  • 1 can (10 oz) green enchilada sauce (or use 2 red)
  • 1 can (15 oz) black beans, drained & rinsed
  • 1 cup frozen corn (optional)
  • 10 small flour or corn tortillas, cut into halves or quarters
  • 3 cups shredded Mexican blend cheese (or cheddar & Monterey Jack)
  • Fresh cilantro or green onions (for garnish)

Instructions

  1. In a large skillet, cook ground beef and onion over medium heat until browned.
  2. Drain excess grease, then stir in garlic and taco seasoning.
  3. Add black beans, corn, and ½ cup enchilada sauce. Mix and remove from heat.
  4. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  5. Spread ½ cup enchilada sauce on the bottom.
  6. Layer tortillas, beef mixture, cheese, and enchilada sauce.
  7. Repeat layers until ingredients are used up, finishing with cheese on top.
  8. Cover with foil and bake for 20 minutes.
  9. Remove foil and bake another 10–15 minutes, until cheese is melted and bubbly.
  10. Let rest for 10 minutes before slicing.
  11. Garnish with fresh cilantro, green onions, or sour cream.

Notes

  • Feel free to customize with your favorite toppings.
  • Can be made ahead and stored in the refrigerator before baking.
  • For a spicier version, add jalapeños or hot sauce.
