Description

Cheddar Chicken Stuffed Waffles are a crispy, cheesy, and savory comfort food that combines the deliciousness of waffles with a flavorful cheddar chicken filling.


Ingredients

  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • 1 ¾ cups milk
  • ½ cup melted butter (or vegetable oil)
  • 1 tsp vanilla extract
  • Optional: ½ cup shredded cheddar for cheesy waffles
  • 2 cups cooked chicken, shredded or chopped
  • 1 ½ cups shredded cheddar cheese
  • 4 slices crispy bacon, crumbled
  • 2 tbsp cream cheese (optional, for extra creaminess)
  • 2 tbsp mayonnaise or 1 tbsp melted butter
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • Salt & pepper to taste
  • Chopped chives (for mixing and topping)

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, whisk eggs, milk, melted butter, and vanilla. Pour wet ingredients into dry and mix until just combined (don’t overmix). Optional: fold in shredded cheddar for extra cheesy waffles.
  2. Preheat your waffle iron and grease lightly. Pour batter to form the first layer and cook until lightly golden. Remove and continue until you have enough waffles to assemble sandwiches.
  3. In a bowl, combine chicken, cheddar, bacon, cream cheese, mayo/butter, garlic powder, paprika, salt, pepper, and chives. Mix well — it should be moist and cheesy.
  4. Heat the waffle iron again and spray with oil. Place one waffle inside. Spoon a generous layer of cheddar chicken mixture evenly across the waffle. Top with another waffle. Close the waffle maker and cook 2–4 minutes until cheese is fully melted, edges are crispy, and waffle is deeply golden.
  5. Slice into squares and garnish with fresh chives. Serve hot with hot honey, maple syrup, ranch, BBQ sauce, or spicy mayo.
