Description

Caramelized Onion & Beef Puff Pastry Pie is a must-try! This dish features golden crispy puff pastry, deeply caramelized onions, savory beef, and a rich gravy filling.


Ingredients

  • 1 lb (450g) ground beef
  • 3 large onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tbsp Worcestershire sauce
  • 1 tbsp tomato paste
  • 1 cup (240ml) beef broth
  • 1 tbsp flour (for thickening)
  • 1 tsp thyme (fresh or dried)
  • ½ tsp rosemary (optional)
  • Salt & pepper to taste
  • 2 sheets puff pastry (thawed but still cold)
  • 1 egg + 1 tbsp water (egg wash)
  • Flaky salt (optional)
  • Fresh thyme for garnish

Instructions

  1. Melt 2 tbsp butter + olive oil in a large skillet over medium-low heat. Add all sliced onions + ½ tsp salt. Cook slowly for 20–25 minutes, stirring often. Onions should turn deep golden and reduce significantly. Add garlic and cook 1 minute more. Transfer onions to a bowl.
  2. In the same skillet, brown the ground beef. Add tomato paste, Worcestershire sauce, thyme, and rosemary. Sprinkle flour over the meat and mix well. Pour in beef broth and stir until thick and glossy. Add the caramelized onions back into the pan. Taste and adjust salt & pepper.
  3. Preheat oven to 400°F (200°C). Roll out one puff pastry sheet and fit it into your baking dish. Lightly prick bottom with a fork. Add all beef–onion filling. Smooth the top.
  4. Roll the second pastry sheet slightly larger. Place it on top of the filled pie. Seal edges by pressing or folding inward. Use a sharp knife to score a diamond-checker pattern (light shallow cuts). Brush with egg wash. Sprinkle flaky salt + thyme.
  5. Bake at 400°F (200°C) for 25–30 minutes or until the pastry is puffed beautifully and golden brown. Let rest 10 minutes before slicing.

Notes

  • This pie is best served warm.
  • Ensure the filling is thick to prevent a soggy bottom.
