Description

Caramel Crunch Cheesecake Bites are creamy mini cheesecakes with a buttery graham crust, soft caramel center, rich chocolate topping, and a sweet crunchy crumble. Perfect for parties, gifting, or keeping in the freezer for ‘just one more.’


Ingredients

  • 1 ½ cups graham cracker crumbs
  • 5 tbsp melted unsalted butter
  • 2 tbsp granulated sugar
  • 16 oz (450g) cream cheese, softened
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 tbsp sour cream
  • 2 large eggs
  • ¾ cup soft caramel sauce (store-bought or homemade)
  • 1 cup semi-sweet chocolate chips
  • 2 tbsp heavy cream
  • ½ cup crushed shortbread cookies or toffee bits
  • 1 tbsp melted butter (optional, helps crumbs stick)

Instructions

  1. Preheat oven to 325°F (160°C). Line a mini muffin tin or mini cheesecake pan with liners.
  2. Stir together graham crumbs, melted butter, and sugar. Press ~1 tablespoon into the bottom of each well. Bake for 5 minutes and set aside.
  3. Beat cream cheese until smooth. Add sugar and mix well. Add vanilla and sour cream. Add eggs one at a time, mixing slowly to avoid air bubbles. Spoon filling over crusts, filling each cup nearly to the top.
  4. Bake for 18–20 minutes, until centers are just set with a slight jiggle. Cool to room temperature. Refrigerate for at least 1 hour to fully firm.
  5. Spoon a teaspoon of caramel over each chilled cheesecake bite. Chill for 10 minutes so caramel thickens.
  6. Melt chocolate chips and heavy cream until smooth and pourable. Spoon or drizzle gently over caramel layer.
  7. Immediately sprinkle shortbread crumbs or toffee bits on top so they stick before chocolate sets. Chill for at least 30 minutes before serving.
