- 1 ½ cups graham cracker crumbs
- 5 tbsp melted unsalted butter
- 2 tbsp granulated sugar
- 16 oz (450g) cream cheese, softened
- ½ cup granulated sugar
- 1 tsp vanilla extract
- 2 tbsp sour cream
- 2 large eggs
- ¾ cup soft caramel sauce (store-bought or homemade)
- 1 cup semi-sweet chocolate chips
- 2 tbsp heavy cream
- ½ cup crushed shortbread cookies or toffee bits
- 1 tbsp melted butter (optional, helps crumbs stick)
Instructions
- Preheat oven to 325°F (160°C). Line a mini muffin tin or mini cheesecake pan with liners.
- Stir together graham crumbs, melted butter, and sugar. Press ~1 tablespoon into the bottom of each well. Bake for 5 minutes and set aside.
- Beat cream cheese until smooth. Add sugar and mix well. Add vanilla and sour cream. Add eggs one at a time, mixing slowly to avoid air bubbles. Spoon filling over crusts, filling each cup nearly to the top.
- Bake for 18–20 minutes, until centers are just set with a slight jiggle. Cool to room temperature. Refrigerate for at least 1 hour to fully firm.
- Spoon a teaspoon of caramel over each chilled cheesecake bite. Chill for 10 minutes so caramel thickens.
- Melt chocolate chips and heavy cream until smooth and pourable. Spoon or drizzle gently over caramel layer.
- Immediately sprinkle shortbread crumbs or toffee bits on top so they stick before chocolate sets. Chill for at least 30 minutes before serving.
