Ingredients

  • ¼ cup (25 g) unsweetened cocoa powder
  • ¾ cup (150 g) granulated sugar
  • ¼ tsp salt
  • ½ tsp baking powder
  • ½ cup (115 g) unsalted butter, melted
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 100 g dark or semi-sweet chocolate, chopped (or chips)
  • A handful of chocolate chunks (optional)
  • A pinch of espresso powder (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a small oven-safe skillet (6–8 inch) or ramekin generously with butter.
  2. In a bowl, whisk flour, cocoa powder, sugar, salt, and baking powder together.
  3. In another bowl, mix melted butter, eggs, and vanilla. Stir into the dry mixture until just combined.
  4. Fold in chopped chocolate (and extra chunks if desired). Pour the batter into the skillet.
  5. Bake for 18–22 minutes, until the top is set but the center is still slightly gooey. (For a molten center, bake closer to 18 minutes.)
  6. Let cool slightly, then serve directly from the skillet. Top with ice cream, whipped cream, or a dusting of powdered sugar.
