Description

A rich and decadent Brownie Cheesecake that combines the fudgy texture of brownies with the creamy goodness of cheesecake, topped with fresh berries and chocolate curls.


Ingredients

  • ½ cup (115 g) unsalted butter
  • 170 g dark chocolate, chopped
  • ¾ cup (150 g) granulated sugar
  • ¼ cup (50 g) brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup (65 g) all-purpose flour
  • 2 tbsp cocoa powder
  • Pinch of salt
  • 450 g (16 oz) cream cheese, softened
  • ½ cup (100 g) sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 100 ml sour cream (or Greek yogurt)
  • Fresh raspberries, strawberries, blueberries (for decoration)
  • Dark chocolate curls or shavings (for decoration)
  • Mint leaves (optional, for decoration)

Instructions

  1. Preheat oven to 160°C (325°F). Line an 8-inch springform pan with parchment paper.
  2. Melt butter and chocolate together (microwave or double boiler).
  3. Whisk in sugars, then eggs and vanilla until smooth.
  4. Fold in flour, cocoa, and salt — mix gently until just combined.
  5. Pour into prepared pan and bake for 15 minutes (it should be slightly underbaked). Set aside to cool slightly.
  6. In a large bowl, beat cream cheese and sugar until smooth.
  7. Add eggs one at a time, mixing on low speed.
  8. Stir in vanilla and sour cream.
  9. Pour gently over the brownie base, smoothing the top.
  10. Place the pan in a larger baking dish and pour hot water halfway up the sides (water bath method).
  11. Bake for 45–50 minutes, until the center is just set and slightly wobbly.
  12. Turn off oven, crack the door open, and let it cool gradually.
  13. Chill at least 4 hours or overnight.
  14. Before serving, top with fresh berries, chocolate curls, and a drizzle of melted chocolate.
  15. Garnish with mint leaves for a pop of color.
