Description

Soft, pillowy sweet buns filled with a rich cream cheese mixture and topped with fresh blueberries. A delightful pastry with Czech origins, popular in Texas bakeries.


Ingredients

  • 4 cups all-purpose flour
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 cup warm milk (110°F / 45°C)
  • ⅓ cup granulated sugar
  • 1 large egg + 1 egg yolk
  • 4 tbsp unsalted butter, melted
  • ½ tsp salt
  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1 ½ cups fresh blueberries
  • 2 tbsp granulated sugar (optional, if berries are tart)
  • Pearl sugar or coarse sugar (optional)
  • Powdered sugar for dusting

Instructions

  1. In a bowl, combine warm milk, sugar, and yeast. Let sit until foamy (5–10 minutes).
  2. Mix in egg, yolk, melted butter, and salt. Gradually add flour until dough forms.
  3. Knead 8–10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise 1 hour, until doubled.
  4. Beat cream cheese, sugar, egg yolk, and vanilla until smooth and creamy. Set aside.
  5. Punch down dough and divide into 12 pieces. Roll into balls and place on a parchment-lined baking sheet.
  6. Cover and let rise another 30 minutes.
  7. Use your fingers or the bottom of a glass to make an indent in the center of each ball.
  8. Preheat oven to 375°F (190°C).
  9. Fill each indentation with cream cheese mixture.
  10. Top with fresh blueberries. Sprinkle with pearl sugar if desired.
  11. Bake for 15–18 minutes, until golden brown.
  12. Let cool slightly and dust with powdered sugar before serving.

Notes

  • Ensure the milk is warm but not hot to activate the yeast properly.
  • For a sweeter topping, add the optional granulated sugar to the blueberries.
  • These kolaches can be served warm or at room temperature.
