Description
Soft, pillowy sweet buns filled with a rich cream cheese mixture and topped with fresh blueberries. A delightful pastry with Czech origins, popular in Texas bakeries.

- 4 cups all-purpose flour
- 1 packet (2 ¼ tsp) active dry yeast
- 1 cup warm milk (110°F / 45°C)
- ⅓ cup granulated sugar
- 1 large egg + 1 egg yolk
- 4 tbsp unsalted butter, melted
- ½ tsp salt
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 egg yolk
- 1 tsp vanilla extract
- 1 ½ cups fresh blueberries
- 2 tbsp granulated sugar (optional, if berries are tart)
- Pearl sugar or coarse sugar (optional)
- Powdered sugar for dusting
Instructions
- In a bowl, combine warm milk, sugar, and yeast. Let sit until foamy (5–10 minutes).
- Mix in egg, yolk, melted butter, and salt. Gradually add flour until dough forms.
- Knead 8–10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise 1 hour, until doubled.
- Beat cream cheese, sugar, egg yolk, and vanilla until smooth and creamy. Set aside.
- Punch down dough and divide into 12 pieces. Roll into balls and place on a parchment-lined baking sheet.
- Cover and let rise another 30 minutes.
- Use your fingers or the bottom of a glass to make an indent in the center of each ball.
- Preheat oven to 375°F (190°C).
- Fill each indentation with cream cheese mixture.
- Top with fresh blueberries. Sprinkle with pearl sugar if desired.
- Bake for 15–18 minutes, until golden brown.
- Let cool slightly and dust with powdered sugar before serving.
Notes
- Ensure the milk is warm but not hot to activate the yeast properly.
- For a sweeter topping, add the optional granulated sugar to the blueberries.
- These kolaches can be served warm or at room temperature.
