Description

A decadent dark chocolate velvet cake layered with fluffy cream filling and swirls of mixed berry compote. Topped with fresh strawberries and blackberries for a stunning, rich, and fruity finish — perfect for special occasions or celebrations.


Ingredients

  • 1 ¾ cups granulated sugar
  • 1 cup unsweetened black cocoa powder (or dark cocoa powder)
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 large eggs
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot coffee (or hot water)
  • 2 cups heavy whipping cream (cold)
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 225 g (8 oz) cream cheese, softened
  • 2 cups mixed berries (blackberries, raspberries, strawberries)
  • ½ cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch + 2 tbsp water (slurry)
  • Fresh strawberries and blackberries (for garnish)
  • Fresh herbs (like rosemary or mint, optional)

Instructions

  1. Preheat oven to 180°C (350°F). Grease and line two 9-inch cake pans.
  2. In a bowl, whisk flour, sugar, cocoa, baking soda, baking powder, and salt.
  3. In another bowl, whisk eggs, buttermilk, oil, and vanilla.
  4. Combine wet and dry mixtures, then stir in hot coffee until smooth.
  5. Divide into pans and bake for 30–35 minutes. Cool completely.
  6. Beat cream cheese until smooth.
  7. Add whipping cream, sugar, and vanilla, whip until fluffy and spreadable.
  8. In a saucepan, cook berries, sugar, and lemon juice over medium heat.
  9. Add cornstarch slurry, stir until thickened. Cool before using.
  10. Place first cake layer on plate, spread cream filling, add a layer of berry compote.
  11. Top with second cake layer, spread more cream filling and compote on top.
  12. Garnish with fresh strawberries, blackberries, and herbs.
