- 1 cup hot coffee (or hot water)
- 2 cups heavy whipping cream (cold)
- ½ cup powdered sugar

- 225 g (8 oz) cream cheese, softened
- 2 cups mixed berries (blackberries, raspberries, strawberries)
- ½ cup sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch + 2 tbsp water (slurry)
- Fresh strawberries and blackberries (for garnish)
- Fresh herbs (like rosemary or mint, optional)
Instructions
- Preheat oven to 180°C (350°F). Grease and line two 9-inch cake pans.
- In a bowl, whisk flour, sugar, cocoa, baking soda, baking powder, and salt.
- In another bowl, whisk eggs, buttermilk, oil, and vanilla.
- Combine wet and dry mixtures, then stir in hot coffee until smooth.
- Divide into pans and bake for 30–35 minutes. Cool completely.
- Beat cream cheese until smooth.
- Add whipping cream, sugar, and vanilla, whip until fluffy and spreadable.
- In a saucepan, cook berries, sugar, and lemon juice over medium heat.
- Add cornstarch slurry, stir until thickened. Cool before using.
- Place first cake layer on plate, spread cream filling, add a layer of berry compote.
- Top with second cake layer, spread more cream filling and compote on top.
- Garnish with fresh strawberries, blackberries, and herbs.

- For a richer flavor, use high-quality cocoa powder.
- Let the cake cool completely before assembling to prevent melting the cream filling.
