Description
Birria Quesadilla Pizza is a delicious fusion dish that combines the flavors of traditional birria with the cheesy goodness of quesadillas and the fun of pizza.

- 2 ½ lbs beef chuck roast (cut into chunks)
- 2 dried guajillo chiles
- 2 dried ancho chiles
- 2 dried pasilla chiles (optional, for more depth)
- 3 roma tomatoes
- 1 onion, quartered
- 5 garlic cloves
- 2 bay leaves
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp smoked paprika
- 4 cups beef broth
- Salt & pepper to taste
- 4 large flour tortillas (10–12 inch)
- 3 cups shredded mozzarella cheese (or Oaxaca cheese)
- 1 cup shredded cheddar cheese
- 1 cup birria beef (shredded, cooked from above)
- 1/4 cup fresh cilantro, chopped
- 1/2 cup diced onions (optional)
- Cooking oil or butter
- Birria consommé (broth from the beef) for dipping
- Salsa verde and salsa roja
Instructions
- Make the Birria Beef: Remove stems and seeds from dried chiles. Toast lightly in a skillet until fragrant. Boil tomatoes, toasted chiles, onion, and garlic for 10 minutes. Blend into a smooth sauce. In a pot, sear beef chunks until browned. Add blended sauce, beef broth, bay leaves, and spices. Cover and simmer 2–3 hours (or pressure cook 1 hour) until beef is tender and shreddable. Shred beef, set aside, and reserve consommé for dipping.
- Build the Quesadilla Pizza: Heat a skillet or griddle over medium-high heat. Lightly oil the surface. Place one tortilla down, sprinkle a generous layer of mozzarella + cheddar. Add shredded birria beef, onions, and cilantro. Top with another tortilla and press down gently. Cook until golden and crispy on both sides, flipping carefully.
- Make It Pizza-Style: Once quesadillas are ready, sprinkle extra cheese on top. Cover with a lid so cheese melts onto the tortilla surface. Slice into wedges like a pizza.
- Serve: Serve hot with consommé for dipping and salsas on the side.

- For a spicier version, add more chiles or use hotter varieties.
