- 4 ripe bananas, sliced
- 2 cups (480 ml) whole milk
- ½ cup (100 g) sugar
- 3 tbsp cornstarch
- 2 large egg yolks
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
- Pinch of salt
- 1 cup (125 g) all-purpose flour
- ½ cup (100 g) brown sugar
- ½ cup (100 g) granulated sugar
- ½ cup (115 g) unsalted butter, melted
- ½ tsp cinnamon
- Pinch of salt
- Caramel sauce (homemade or store-bought)
- Extra banana slices
- Crushed vanilla wafers or toasted pecans (optional)
Instructions
- Make the Custard Filling: In a saucepan, whisk sugar, cornstarch, salt, and milk until smooth. Cook over medium heat, stirring constantly, until it thickens (about 6–8 minutes). Remove from heat. Whisk in egg yolks quickly, then return to low heat for 1 minute. Stir in butter and vanilla until smooth and creamy. Let cool slightly, then fold in sliced bananas.
- Prepare the Crumble: In a bowl, mix flour, both sugars, cinnamon, and salt. Add melted butter and stir until crumbly.
- Assemble the Cobbler: Pour banana custard mixture into a greased 8×8-inch (20×20 cm) baking dish. Sprinkle crumble evenly over the top.
- Bake: Bake at 350°F (175°C) for 25–30 minutes, or until golden and bubbling. Let rest for 10 minutes before serving.
- Serve: Drizzle with warm caramel sauce. Top with fresh banana slices and optional crushed wafers or nuts.
