Description

Ingredients

  • 3 tbsp unsalted butter, melted
  • 1 tbsp granulated sugar
  • 8 oz (225g) cream cheese, softened
  • ¼ cup (60ml) sour cream
  • ⅓ cup (65g) granulated sugar
  • 1 large egg
  • ½ tsp vanilla extract
  • 1 tsp lemon zest (optional, for brightness)
  • ½ cup mixed berries (blueberries, raspberries, or strawberries)
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch + 1 tsp water

Instructions

  1. Make the Berry Swirl Sauce: In a small saucepan, combine berries, sugar, and lemon juice. Cook over medium heat until berries start breaking down (about 5 minutes). Stir in cornstarch slurry (cornstarch + water) and cook until thickened. Remove from heat and strain if you want a smooth sauce. Let cool completely.
  2. Prepare the Crust: Preheat oven to 325°F (160°C). Line a 12-cup muffin tin with paper liners. Mix graham cracker crumbs, sugar, and melted butter. Press about 1 tablespoon of crust mixture into each cup. Bake for 5 minutes, then set aside to cool.
  3. Make the Cheesecake Filling: Beat cream cheese and sugar together until smooth. Add sour cream, egg, vanilla, and lemon zest; beat until creamy. Spoon filling evenly into the prepared crusts (about ¾ full).
  4. Add the Swirl: Drop ½ teaspoon of berry sauce on top of each cheesecake. Use a toothpick to gently swirl it into a pretty pattern.
  5. Bake: Bake for 16–18 minutes, until the centers are just set but still slightly jiggly. Let cool in the pan, then refrigerate for at least 2 hours (preferably overnight).
