  • 1 small onion, diced

  • 2 tbsp butter

  • 1 tsp dried thyme

  • Salt and pepper to taste

  • For the Dumplings:

    • 2 cups all-purpose flour

    • 1 tbsp baking powder

    • 1 tsp salt

    • 1 cup milk

    • 3 tbsp melted butter


Instructions

  • In a large pot, melt butter over medium heat. Add onion, carrots, and celery. Sauté until softened.

  • Pour in chicken broth. Add thyme, salt, and pepper. Bring to a simmer.

  • Stir in shredded chicken. Let the soup simmer while preparing dumplings.

  • In a bowl, mix flour, baking powder, and salt. Add milk and melted butter, stirring until combined into a soft dough.

  • Drop spoonfuls of dough into the simmering broth. Cover the pot and simmer for 15 minutes—don’t lift the lid.

 

  • Once dumplings are cooked through, gently stir and serve warm.
