Ingredients
1 rotisserie chicken (shredded, skin and bones removed)
6 cups chicken broth
1 cup chopped carrots
1 cup chopped celery
1 small onion, diced
2 tbsp butter
1 tsp dried thyme

For the Dumplings:
2 cups all-purpose flour
1 tbsp baking powder
1 tsp salt
1 cup milk
3 tbsp melted butter
Instructions
In a large pot, melt butter over medium heat. Add onion, carrots, and celery. Sauté until softened.
Pour in chicken broth. Add thyme, salt, and pepper. Bring to a simmer.
Stir in shredded chicken. Let the soup simmer while preparing dumplings.
In a bowl, mix flour, baking powder, and salt. Add milk and melted butter, stirring until combined into a soft dough.
Drop spoonfuls of dough into the simmering broth. Cover the pot and simmer for 15 minutes—don’t lift the lid.
Once dumplings are cooked through, gently stir and serve warm.
