- 3 ripe bananas (mashed)
- 1/3 cup melted butter
- 2/3 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 and 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
- In a large bowl, mash the ripe bananas. Stir in the melted butter until well combined.
- Mix in sugar, egg, and vanilla extract. Stir until smooth.
- In a separate bowl, whisk together the flour, baking soda, and salt. Add the dry ingredients to the wet mixture and stir until just combined.
- Gently fold in the chocolate chips. Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Allow to cool slightly before serving.
Notes
- These muffins are best served fresh but can be stored in an airtight container for a few days.
- Feel free to add nuts or omit chocolate chips for variations.
