Description

Tender baked potatoes piled high with smoky pulled pork, creamy ranch sauce, crispy bacon, melted cheese, and fresh chives—comfort food at its finest!


Ingredients

Scale
  • 4 large russet potatoes
  • 2 tbsp olive oil
  • 1 tsp salt
  • 3 cups cooked pulled pork (leftovers or store-bought BBQ pulled pork work perfectly)
  • ½ cup BBQ sauce
  • ½ cup ranch dressing (or homemade ranch dip)
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked crispy & crumbled
  • 2 tbsp chopped fresh chives

Instructions

  1. Preheat oven to 400°F (200°C). Scrub potatoes clean and dry.
  2. Rub with olive oil and salt. Place directly on oven rack.
  3. Bake 55–60 minutes until tender when pierced with a fork.
  4. In a skillet, reheat pulled pork with BBQ sauce until hot and saucy.
  5. Slice each potato open lengthwise and gently fluff insides with a fork.
  6. Pile BBQ pulled pork on top.
  7. Drizzle ranch dressing over pork.
  8. Sprinkle with shredded cheddar, crispy bacon, and fresh chives.
  9. Best enjoyed warm, straight from the oven with extra ranch or BBQ sauce on the side.
