A delicious recipe for traditional Italian pizzelle cookies.
Ingredients

- 3 large eggs
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, melted and slightly cooled
- 1 tablespoon pure anise extract
- 1 teaspoon vanilla extract (optional)
- 1 3/4 cups all-purpose flour
- 2 teaspoons baking powder
- Pinch of salt
- Powdered sugar (optional, for dusting)
Instructions
- In a large mixing bowl, beat the eggs and sugar together until pale and frothy.
- Slowly mix in the melted butter, then add anise extract and vanilla (if using).
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry mix to the wet ingredients, blending until smooth.
- Preheat your pizzelle iron according to its instructions. Lightly grease if needed.
- Drop a rounded teaspoon of batter into the center of each iron mold.
- Close and cook for 30–45 seconds, or until the cookies are lightly golden.
- Remove with a fork and transfer to a wire rack to cool completely.
- Dust with powdered sugar if desired, and enjoy!
